Sweet Salt Australia Pty Ltd trading as Cornerstone Pizzeria e Cucina is looking for a Sous

Chef to work full-time.

We are looking for a qualified, motivated, highly experienced chef to join our team of

passionate and dedicated kitchen staff, reporting to the Head Chef. Experience in cooking

Italian cuisine desirable.

Responsibilities:

  1. Second in charge to the Head Chef in the kitchen
  2. Managing junior kitchen staff
  3. Ensuring quality of dishes cooked
  4. Assisting in planning menus and specials
  5. Assisting in managing the food budget and labour costs
  6. Training and mentoring of junior kitchen staff
  7. Maintaining stocks of food and kitchen supplies
  8. Ensuring safe food storage and preservation in accordance with Food Safety Plan
  9. Enforcing hygiene and OH&S regulations

Duties:

  1. Second in charge to the Head Chef in the kitchen
  2. Preparing and cooking food
  3. Supervising and monitoring all food preparation and presentation to ensure quality and
  4. restaurant standards
  5. Discussing food preparation issues with kitchen staff
  6. Demonstrating techniques and advising on cooking procedures
  7. Supervising and managing junior kitchen staff
  8. Training and mentoring of junior kitchen staff
  9. Working with the Head Chef to maintain kitchen organization, staff ability, and training
  10. opportunities
  11. Enforcing and following hygiene regulations and procedures
  12. Assisting Head Chef in planning menus and specials
  13. Freezing and preserving food
  14. Assisting in planning menus for special functions
  15. Managing food and product ordering by keeping detailed records and minimising waste, plus
  16. working with existing systems to improve waste reduction and manage budgetary concerns
  17. Monitoring stock levels of kitchen supplies and ordering stock and supplies
  18. Checking food deliveries for quality, correct temperature and quantities
  19. Acting in place of and performing the duties of the Head Chef in the Head Chefs absence

Must have minimum 3 years’ experience as Chef in a busy kitchen and some experience as

Sous Chef desirable.

The position is Full-Time.

Salary negotiable for the right candidate and level of experience.
