Responsibilities
- Leading and managing kitchen operations across the bistro, café, and function spaces
- Working hands-on as a qualified chef, supporting food preparation and service
- Overseeing menu planning, food quality, presentation, and portion control
- Managing food and labour costs, stock control, and supplier relationships
- Ensuring compliance with food safety, WHS, and OLGR regulations
- Training, mentoring, and supporting the kitchen team to maintain high standards
Requirements
- Certificate III in Commercial Cookery (or higher)
- Experience in senior culinary leadership roles with hands-on kitchen involvement
- Solid knowledge of food costing, stock management, and compliance regulations
- Excellent leadership and communication skills with the ability to lead and develop a team
- Knowledge of clubs, hospitality venues, or similar environments (preferred)
- Flexibility to work evenings, weekends, and public holidays
