Responsibilities

  1. Leading and managing kitchen operations across the bistro, café, and function spaces
  2. Working hands-on as a qualified chef, supporting food preparation and service
  3. Overseeing menu planning, food quality, presentation, and portion control
  4. Managing food and labour costs, stock control, and supplier relationships
  5. Ensuring compliance with food safety, WHS, and OLGR regulations
  6. Training, mentoring, and supporting the kitchen team to maintain high standards

Requirements

  1. Certificate III in Commercial Cookery (or higher)
  2. Experience in senior culinary leadership roles with hands-on kitchen involvement
  3. Solid knowledge of food costing, stock management, and compliance regulations
  4. Excellent leadership and communication skills with the ability to lead and develop a team
  5. Knowledge of clubs, hospitality venues, or similar environments (preferred)
  6. Flexibility to work evenings, weekends, and public holidays
