Job description:

We are seeking a skilled and motivated Chef to oversee day-to-day kitchen operations at Espresso Lane Café. The Chef will be responsible for menu planning, food preparation and cooking, quality control, and maintaining food safety and WHS compliance. The role requires strong leadership, organisational ability, and the capacity to manage a fast-paced café kitchen.

The Tasks for the Position Include:

  1. Plan and develop menus and daily specials, including estimating and monitoring food costs, portioning, and pricing to support profitability and customer demand.
  2. Prepare, season and cook café menu items (e.g., breakfast dishes, eggs, grilled items, burgers/sandwiches, salads, and other hot meals) to consistent quality and presentation standards.
  3. Supervise and coordinate kitchen operations during service, ensuring timely output and effective workflow.
  4. Train and supervise kitchen staff on cooking methods, plating standards, and safe food handling procedures.
  5. Monitor food quality at all stages of preparation and service, and resolve issues promptly to maintain consistency.
  6. Manage stock and ordering, including checking deliveries, monitoring inventory levels, and ensuring correct storage, labelling, and FIFO rotation.
  7. Maintain food safety and hygiene standards, ensuring compliance with HACCP principles and relevant food safety regulations.
  8. Maintain a clean and safe kitchen environment, including safe use of equipment, cleaning schedules, and adherence to workplace health and safety procedures.
  9. Minimise waste and control costs through portion control, efficient prep planning, and ongoing monitoring of kitchen practices.
  10. Liaise with management and front-of-house staff to ensure smooth service delivery and a positive customer experience.

The Skills Required for This Position Are:

  1. Certificate IV in Commercial Cookery and Diploma of Hospitality management (or equivalent).
  2. Minimum 1 year experience as a Chef in a commercial kitchen (café/restaurant environment preferred).
  3. Demonstrated ability to plan menus, manage kitchen operations, and supervise staff.
  4. Strong knowledge of food safety, hygiene, and HACCP compliance.
  5. Strong time management, teamwork, and communication skills.
