The restaurant is renowned for delivering a high-quality dining experience that combines traditional Italian culinary techniques with a vibrant and welcoming atmosphere for families, groups, and local patrons.

To support the restaurant’s operational requirements and maintain its reputation for excellence, Dai Romani is seeking a skilled and experienced Chef to join its kitchen team. The Chef will play a key role in food preparation, maintaining kitchen standards, and contributing to the overall success of the restaurant’s culinary operations, while also assisting the Senior Chef and management in operational and strategic kitchen tasks.

Salary: $76,000–$85,000 AUD

Location: 301 Trafalgar St, Petersham, NSW 2049, Australia

Key Responsibilities:

  1. Prepare, cook, and present a range of high-quality Italian dishes in line with Dai Romani’s menu and service standards.
  2. Ensure consistency, flavour accuracy, and presentation quality across all dishes produced.
  3. Lead, manage, and supervise cooks and kitchen hands to maintain an efficient workflow during daily operations and peak periods.
  4. Assist the Senior Chef and management with daily kitchen operations, menu planning, and strategic culinary decisions.
  5. Assist the Sous Chef with menu planning, including function menus, catering requirements, and preparation for high-volume service times.
  6. Contribute to inventory management, including stock rotation, ordering, and monitoring ingredient quality and freshness.
  7. Oversee daily mise en place, ensuring all stations are fully prepared for service.
  8. Maintain strict kitchen hygiene, food safety compliance, and occupational health and safety standards in accordance with regulatory requirements.
  9. Train, mentor, and support junior kitchen staff to uphold high culinary and operational standards.

Requirements:

  1. Certificate IV in Commercial Cookery or equivalent qualification.
  2. At least 2-3 years of relevant experience as a Chef in a busy commercial kitchen.
  3. Strong knowledge of Italian cuisine is highly preferred.
  4. Ability to work effectively under pressure and maintain attention to detail.
  5. Passion for food, teamwork, and delivering an exceptional dining experience.
