BUSINESS DESCRIPTION:
We are a well-established Lebanese, Mediterranean, and Middle Eastern restaurant located in South Granville. At Alwaha Eatery, we proudly deliver authentic cuisine that caters to a diverse range of dietary preferences, reflecting our strong commitment to quality and cultural authenticity.
Due to the high volume and fast-paced nature of our daily operations, we are seeking an experienced Chef to oversee kitchen workflow, maintain operational efficiency, and ensure the consistent delivery of exceptional dining experiences to our customers.
JOB RESPONSIBILITIES:
- Prepare and cook a wide range of authentic Lebanese, Mediterranean, and Middle Eastern dishes, including charcoal chicken, charcoal-grilled meats, traditional plates, and house-made sauces.
- Maintain authenticity of flavours and presentation while ensuring consistency across all menu items.
- Adapt dishes to accommodate various dietary requirements, including gluten-free, vegetarian, vegan, dairy-free, and other customer preferences.
- Contribute to menu development by introducing new dishes and specials that align with Middle Eastern cuisine, seasonal produce, and cost considerations.
- Oversee charcoal cooking processes, ensuring proper preparation, marination, and grilling techniques to maintain quality and efficiency.
- Work efficiently in a fast-paced, high-volume kitchen environment while maintaining high standards of food quality and presentation.
- Take responsibility for daily kitchen operations when required, including coordinating workflow and supporting team performance.
- Ensure consistency in portion sizes, taste, and presentation to maintain customer satisfaction and the restaurant’s reputation.
- Support the smooth operation of the kitchen during peak service periods through effective communication, organisation, and adherence to procedures.
- Assist in training and mentoring junior kitchen staff, demonstrating proper cooking techniques and food preparation methods.
- Ensure strict compliance with food safety, hygiene, and workplace health and safety regulations.
- Monitor stock levels and minimise wastage through proper food handling, storage, and portion control practices.
TECHNICAL SKILLS & EXPERIENCE:
- Associate Degree, Advanced Diploma or Diploma in a related field
- Minimum two years’ experience obtained working in a similar establishment
- Familiarity with Lebanese and Mid-Eastern Cuisine
